Description
-Complex process of organic black bean brewing begins with a rigourous selection of the finest black beans that after being soaked, steamed and then inoculated with Aspergillus koji. After mixing salt, a last coat of salt is spread before sealing the vat. The mixture is then exposed in the vats.
-National standard: CNS 423 Grade A product of organic soy sauce, total nitrogen content 1.4g/100ml, amino nitrogen 0.56g/100ml or more, no salt soluble solids 13% or more.
